Red Wine Chocolate Cupcakes

IMG_4007Happy Valentine’s Day!!!  I was supposed to go to a cupcake swap yesterday, and figured red wine and chocolate totally fit the theme for Valentine’s Day.  Sadly, I got snowed in and couldn’t make it.  Looks like I’m stuck with a dozen of these… =)

This is not actually a cupcake recipe since it’s more of a way to tweak chocolate cake.  You can make it from scratch using your favorite recipe or make it from a boxed cake mix.  Both work well.

To make these cupcakes, replace all of the water in the recipe with red wine (I like Cabernet, but use a wine that you like). Other than that, follow the directions for making the cupcakes as you regularly would, all the way through baking and letting them cool.

Once they cool, I use a syringe to inject ~2 mL of wine into the middle of the cupcake (go straight down from the highest point on the top).  If you don’t have a syringe, you can poke a small hole with a toothpick and carefully spoon in a few drops of wine in.

Frost it with a simple ganache or chocolate buttercream.  Decorate and enjoy!
