Cauliflower Mash

Cauliflower MashI am SO not a cauliflower fan, but even I love this recipe!  It’s a great substitute for mashed potatoes, and can take on whatever flavor you like.  I prefer a garlic-Parmesan flavor, so that is the recipe described below.  Sometimes, if I have some nice blue cheese, I will substitute that for the Parmesan.


1 head cauliflower, cut into big florets
1.5 oz parmesan cheese, grated or cut into big chunks
1 clove garlic, cut into big pieces
1/4 cup milk
1 tbsp butter
salt and pepper, to taste


1.  Boil the cauliflower for 6 mins.  Drain well.

2.  Blend the cauliflower, Parmesan, garlic, and milk.

3.  Transfer into serving dish and mix in butter.  Season with salt and pepper- to your taste.
