French toast falls into the “comfort foods” category for me, whether or not it is breakfast time. This is a fairly quick recipe for making french toast with a slight twist since I really like cinnamon and maple flavors. You can make the mix the night before if you want and keep it in the fridge until you are ready to use it.
1/3 cup heavy cream (I substitute almond milk when I want to be healthier)
1/4 tsp cinnamon
1 tbsp maple syrup
pinch of salt
2 slices thick bread (I use Texas toast)
butter (for skillet)
1. Whisk the eggs, heavy cream, cinnamon, maple syrup, and salt together.
2. Heat a skillet on med-high. When hot (water skitters across), add a small amount of butter to the pan and spread.
3. Dip both sides of a slice of bread in the mix, let it sit for a second, then shake off the excess. Place on skillet and cook until golden brown. Flip and cook the other side until golden brown.
4. Serve warm- plain or with toppings (whip cream, syrup, butter, chopped nuts, etc).
