These little onions are great accompaniments to a heavy meal. Instead of having the spiciness that red onions normally have, the pearl onions have a sweeter, milder flavor. As it cooks, the balsamic vinegar and honey caramelizes them a bit, so they taste amazing when they are done!
1 tsp dried rosemary, crushed
1/4 tsp sea salt
1.5 tbsp balsamic vinegar (good quality)
1 tsp honey or sugar
1/2 tbsp olive oil
8 oz frozen pearl onions (20-25 onions- If using fresh, peel and boil for 1 min, then drain)
1. In a large bowl, mix together the rosemary, salt, balsamic vinegar, honey, and olive oil. Toss in the pearl onions and mix until each one is coated.
2. Roast in oven at 450 F for 40 min, stirring every 10 min.
