Rice Wrap Crackers


 

A few months ago, I went to the DC fancy food show and got to sample all these amazing food products!  One of the new things I tried was Mountain Bread Rice wraps made from rice flour.  I used these to make some at home and they came out great.  Thin, cripsy, and flavorful!

Ingredients

3 pieces of rice wrap bread (I used ones that are ~6 inches x 10 inches)
1/2 tsp olive oil
2 tsp lemon juice
a pinch of salt (<1/8 tsp)
1 tsp of your choice seasoning (I used Italian seasoning on one batch and parmesan cheese on another batch)

Directions

1.  In a small bowl, mix the olive oil, lemon juice, salt, and Italian seasoning.

2.  Place one of the rice wraps on a baking tray.  Spread ~1/3 of the seasoning mix on the lavash.

3.  Bake at 350 F for 5 minutes (edges will be light brown).  Remove and break into pieces.
