10-day Vegan Detox Diet (Days 1-3)

The next few posts will be slightly different from my usual ones.  I’m doing a 10-day vegan detox and thought it would be fun to post the menu and recipes I’m following and how I’m feeling.  The detox program is led by Linda Petursdottir (http://simplewellbeing.com/).  Please visit her site for more information.

My initial thought when finding out more about the plan was, oh boy… this is going to be a lot of cooking.  However, that passed, and now I’m just really excited!  The idea of giving your body a “reset” without being hungry is awesome.  I think what resonated with me for this detox is that it’s a holistic approach, with one aspect being a change in what you put in your body.

In an effort to not feel overwhelmed with cooking, I decided to keep the same menu for 2-3 days so I wouldn’t be cooking a lot each day.  I will post these menus over the next 10 days, with links to the recipes.

Vegan Detox Diet (Days 1-3)

Wake-up: 8 oz water with 1 tbsp lemon juice + pinch of cayenne, 8 oz water with 1 tbsp chia seeds

Breakfast: Quinoa cereal with almond milk and blueberries

Morning Snack: carrots and zucchini + hummus

Lunch: Yemiser W’et (Ethiopian Red Lentils) with brown rice, Green Juice (from Puree Juice Bar),

Afternoon Snack: Vegan Chocolate Chia Pudding, mixed nuts

Dinner: Ohloh / Baigan Bharta, cucumbers with salt and ground cumin powder

Before bed: Chamomile tea, Detox tea (if I can find one that sounds good)

Anytime: water, herbal tea, noori, mixed nuts (if I get hungry)

  1. I forgot to mention that the Yemiser W’et (Ethiopian Red Lentils) has Niter Kibbeh, which has butter. Since the detox program is vegan (no dairy), I substituted the butter in the Niter Kibbeh recipe with olive oil and it still tasted great!
