Cranberry Walnut Salad



I don’t usually like sweet and salty mixing, but this salad is an exception.  Plus, with a brownish tofu turkey, brownish gravy, mashed potatoes, etc., this adds color! =)

Ingredients

3/4 cup crasins
3/4 cup walnuts
1 carrot, grated
1/2 small onion, sliced thin (optional)
1/2 bell pepper, sliced thin
1/2 cup grape tomatoes
1 bag of fresh baby spinach
1 clementine, with individual segments peeled
handful of pomegranate seeds

Directions

1.  Make basic salad dressing (see previous post)

2.  Mix everything but the spinach in a serving bowl and add enough dressing to coat.  Add the spinach and mix.
